Kokumi Technologies is building aaloo.ai as a Taste Infrastructure OS — a deep-tech platform that makes taste measurable, computable and usable by food businesses, digital platforms and automated cooking systems. The product combines a consumer-facing food community layer with a B2B taste intelligence layer. On aaloo.ai, users log meals, cravings, food stories, preferences and sensory experiences. This creates real-world taste data across dishes, ingredients, regions, occasions and user cohorts. On the technology side, our system converts structured recipe and cooking-process inputs into predicted flavour profiles by modelling ingredient chemistry, cooking transformations and sensory outcomes. The platform takes inputs such as ingredients, quantities, form of ingredients, cooking method, time, temperature, medium, pH, moisture and process sequence. It then generates a structured sensory profile covering taste, aroma, texture, mouthfeel, colour and spice/heat sensations. Over time, this builds a proprietary Taste Graph and PalatePrint layer that can power product R&D, recipe standardisation, ingredient substitution, taste-led recommendations and control targets for robotic or automated kitchens. In simple terms, we are building the operating system for taste — a foundational layer that helps the food ecosystem understand not only what people eat, but why they like it and how that taste can be recreated, improved or personalised.
